Whether we enjoy tacos every Tuesday or not, we all have something in common - tacos are a crowd pleaser! Better yet, with the myriad of ways that the mixings for tacos can be sliced and diced - the options really feel endless. Between vegetarian enchiladas and pulled pork nachos, wait until you check out Rebecca's go-tos. Jen even turns to breakfast tacos - why not? With the ease of throwing them together quickly and the ability to reheat them simply for a post-pracitce dinner or an on-the-go leftover lunch at work, tacos are a staple in our homes - any day of the week. Taco Tuesday is a weekly holiday in our home. At some point each Tuesday, I'll pause and think, "Uh, what's for dinner? OH, taco Tuesday!" And, a happy dance ensues. This started as a simple way to meal plan each week and when everyone looked forward to it, we stuck with it. There are plenty of variations, so it never gets old.


Our favorite "recipe" of the moment is half turkey and half ground beef for the protein. Then, we have all the accoutrements available and people can pick between tacos, quesadilla, or nachos - however you would like to combine meat, cheese, avocado, sour cream, salsa and veggies, be my guest.


Taco Tuesday also makes for the best leftovers ever. My co-workers know, if it's Wednesday, I'm bringing taco salad for lunch. Last thing I love about tacos - they are easy to warm up when contending with sports schedules. Through some sports seasons, we have the pre-practice dinner and the post-practice dinner. Tacos are just as good warmed up later, so the post-practice dinner isn't ho hum.


PS - These are my favorite gluten free "wraps" for a quesadilla. With enough time on the griddle, they crisp up to be delish..

While we don't officially celebrate Taco Tuesday, tacos are definitely a staple in our family. They're one of those meals that everyone looks forward to, no matter the day of the week. What makes them so great is how simple they are to put together, especially on a busy night. With a good protein base, some fresh toppings, and warm tortillas, you can have a delicious dinner on the table in no time. Even better is that there are no rules. Grab what you have in the fridge and roll with it! You want a breakfast taco- great- we have eggs for that!

Laying out grilled veggies, cheese, salsa, and other toppings turns it into a fun, interactive meal where everyone can customize their plate. Tacos have become our go-to for an easy, balanced meal that brings everyone to the table.

In our house, Taco Tuesday encompasses anything that involves tortillas. My favorite is black bean and sweet potato enchiladas. These are vegetarian, packed with great flavor, nutrients, and fiber. My second favorite is nachos, preferably pulled pork with refried beans, lots of cheese, tomatoes, and sour cream. I use donkey chips (they hold up the best) and carefully smear a little refried bean on every chip before I bake them (even distribution is essential with nachos.) While I may not make tacos every Tuesday, I do love the idea of using a consistent theme for meal planning. Meatless Monday, Taco Tuesday, Fish Friday - it creates a structure that makes it super easy to plan for the week and the month. I still rotate dishes, but I'm not left scratching my head for ideas week after week.

Do we celebrate Taco Tuesday? Yes… and also no. Because in my house, tacos can happen any day of

the week. It’s one of those go-to meals that works for everyone, even my picky eaters, and I can switch things up without making a totally different dinner.


I usually build them around ground beef or turkey for a solid protein source that keeps everyone fuller longer. Tortillas (or sometimes chips — no shame here) bring in the carbs for energy, while avocado and cheese add those satisfying healthy fats. I pile on all the veggies for flavor, crunch, and a dose of antioxidants.


Sometimes I change it up with shrimp tacos, or I’ll make a quick slaw to swap in for the usual lettuce and tomato. It’s an easy way to get creative, still check all the macro boxes, and keep dinner stress-free. Everyone’s happy, and I get a break from overthinking mealtime...yes, please!

We do not celebrate taco Tuesday each week but we really should!! Tacos are definitely a staple and family favorite, but my oldest's favorite is enchiladas - which have been replacing tacos more often in our house.


Our tacos are an easy night of cooking because it really comes down to a big batch of taco meat, shells and everyone’s various preferred toppings. My 7-year-old still likes to eat hers deconstructed.


Enchiladas are rapidly becoming the more favorite of the two meals. We fill ours with shredded chicken (seasoned with taco seasoning), onions, and sour cream. We top them with enchilada sauce and cheese before placing in the oven. Our favorite toppings when ready to eat are shredded lettuce, sour cream, cilantro and pico de gallo. Finishing touches include a spicy marg!

Yes and don’t forget the salt rimmed margarita, too! Taco Tuesday is a staple in our home! My kids wake up on Tuesdays and say “It’s Taco Tuesday”. This is the one meal I know everyone in my family will participate in making and enjoy eating.


The best part of taco Tuesday for me is watching my whole family come together. Life is so busy with activities, work, and etc, whether we eat at 3:00pm or 9:00pm it is the one constant in our week!


I love that you can switch it up week to week, too! We do a variety of chicken, ground beef or turkey, or steak. My newest obsession is using the air fryer to cook sweet potato cubes as my base vs. tortillas. My husband makes a delicious pineapple salsa that brightens up any taco. Last but not least, do not forget the queso!
