What is your favorite way to enjoy a watermelon?

To quote Harry Styles, "Watermelon sugar high!" Or, shall we say, "Watermelon sugar - Hi!"?? Bringing a lighter look at a summer favorite today - the little "ah" that comes from a perfectly sweet summer watermelon. On a hot day, poolside, pre-cut, mixed into a mocktail (or cocktail), added to a salad, happily on a plate next to something grilled - let us count the (little) ways that watermelon is such a simple treat. Watermelon is hands down my favorite summer fruit—but only if it’s the perfect one. It has to be sweet, juicy, and perfectly crisp. I love it straight from the fridge, tossed into a fresh summer salad, or blended into a refreshing cocktail. No matter how you serve it, watermelon simply tastes like summer. Below is my go-to watermelon spritz, and it’s just as delicious as a mocktail!
Watermelon Spritz

Ingredients:
2 cups cubed watermelon
1 oz fresh lime juice
2 oz vodka (omit for a mocktail
½ cup sparkling water
6–8 fresh mint leaves
Directions:

Muddle the watermelon and mint together until the juices are released.
Add the lime juice and vodka (if using), then stir to combine.
Fill a glass with ice, pour in the watermelon mixture, and top with sparkling water.
Garnish with a sprig of fresh mint or a small watermelon wedge, if desired.

Watermelons are one of my favorite things to bring to a BBQ or to put out for a crowd. Mostly because they are easy, delish and just scream summer. Typically, I just cut it up, leaving the rind on and put it in a shallow backing dish and watch it get gobbled up!
I also love to put it on my favorite summer salad. This is a go-to and super easy:
Spinach
Watermelon (or strawberries, or both!)
Feta
Almond slivers
Grilled chicken (BBQ or paprika and garlic)
Plus, any other random veggie left overs that sound good!
Almond Flour Crackers on the side

Only two of us in my household love watermelon, so I rarely buy a whole one- it's just too much! Instead I pay extra for a container of the pre-cut from the grocery store. I've never regretted that decision.
I dig in as soon as I get home and return to the fridge to grab a chunk of two when I'm hot, thirsty or craving a refreshing snack.

This is a family favorite in our household! I literally just bought one this week and sliced it up as a side dish for my kids' dinner. I even said to them "nice little change up, right guys?!" They all whole-heartedly agreed. My 8-year-old commented "thanks for taking the green part off mom." Haha, love that kid. I've never really given it to them any other way!
It's the perfect snack to have on hand and I just let them dig in whenever they want. They just need to make sure they wash their hands and mouths after as watermelon stains easily! On the other hand, I can imagine it would be good in a fresh summer drink, mocktail or cocktail. Add some lime seltzer, fresh lime juice, the leftover juice of the watermelon and if you want, a shot of vodka or gin. However you like it, I can imagine enjoying sipping it on my porch after a hot summer day at the beach to cool off!
